Cheese sauce

60 g,  Butter

4 tbsp,  Plain Flour

0.13 tsp,  Paprika

0.50 tsp,  Mustard Powder

0.13 tsp,  Black pepper

0.13 tsp,  salt

475 ml,  milk

75 ml,  cooking sherry

75 g,  grated Gruyere Chese

30 g,  grated Cheddar Chese


  1. In a medium sized saucepan, melt the butter over low heat. Do not overheat.
  2. Stir in flour, paprika, mustard, pepper and salt and sauté for two minutes. Pour in milk and sherry; cook, stirring constantly, until thickened.
  3. Stir in cheeses. Keep stirring constantly so that the cheese gets melted and blended properly. Serve immediately.
