Christmas bread sauce

1  Large Onion

12  Cloves

475 ml,  Milk

2  Bay leaves

1 tbsp,  Whole Black peppercorns

0.25 tsp,  salt and pepper to taste

125 g,  Breadcrumbs

55 g,  Butter

1 tsp,  nutmeg

3 tbsp,  Double Cream


  1. In a medium sized pan, place milk, bay leaves and peppercorns and mix well.
  2. Cut the onion into two half pieces and stud with the cloves. Place in pan along with other mixture, add salt and pepper and bring all to the boil. Stir constantly.
  3. After boiling for few minutes, remove from heat and allow it to cool for 2 hours, or overnight in fridge, to blend the flavours well.
  4. Strain milk from the container and place back in pan and warm over medium heat. Stir the breadcrumbs and add half the butter. Stir often, until sauce has thickened.
  5. Add whipping cream and remaining butter. Season with nutmeg and more salt and pepper, if necessary. Serve with roast turkey or chicken.
