Pepper Sauce

Cover Recipe: "My favourite dish in the local italian is Filetto "Al Pepe". This is very close to the sauce, give it a try its delicious. To cheat you can replace the demi with good beef stock but it wont be as good."

Pepper Sauce

Yeild:

ml 

Ingredients:

300 ml,  red wine

300 ml,  demi glace

300 ml,  single cream

2 level tbsp,  english mustard

2 tbsp,  black peppercorns, crushed

Preparation:

  1. Mix the red wine and demi glace and boil rapidly until reduced by half
  2. Add the cream, mustard, peppercorns and simmer until it reaches a sauce consistency, about 15 minutes.
  3. Check and adjust the seasoning, serve with fillet steak done medium rare, yum!
