Bulgarian Cold Cucumber Soup

200 g,  1 large cucumber, peeled, seeded and chopped

10 g,  4 cloves garlic

0.50 tsp,  salt

96 g,  walnuts

1 servings,  2 slices day-old crustless white sandwich bread, torn into pieces

4 tbsp,  olive oil

192 g,  yogurt

2 tsp,  lemon juice

2.25 oz,  cold water

4 servings,  Fresh dill


  1. Using a food processor, thoroughly process garlic, salt, 1/4 cup walnuts and bread and make it a puree. Slowly add oil and process the mixture till all the ingredients are mixed properly.
  2. Pour the mixture to a large bowl, add yogurt, cucumber and lemon juice and beat well. Now, the mixture can be served as a dip. For soup preparation, add water and leave chunky or puree until smooth.
  3. Refrigerate for 1 hour. Pour soup into chilled bowls and garnish with 1/2 cup of coarsely chopped walnuts, a drizzle of olive oil and fresh dill.
