Canja De Galinha




3 g,  Pound of Chicken

3 oz,  Chicken Gibbets

4 medium,  Onions, sliced

1 fl oz,  Stalk of Celery, finely chopped

1 tbsp,  Salt

2 fl oz,  Bat Leaves

1 medium,  cup of rice

2 medium,  Lemon

10 medium,  mint leaves, Juiced

2 tsp,  Black pepper, grinded

6 medium,  cups of water


  1. Put the chicken, the sliced onions, celery, salt, bay leaves, giblets and the chicken in a large saucepan and simmer over low heat for s hours.
  2. Bring out the chicken and put the rice into the broth and simmer for 20-30 minutes to soften the rice. Always stir the boiling broth occasionally
  3. Remove the bones from the chicken and cut the meat into smaller pieces, after which you add it to the broth, together with the lemon juice.
  4. Then sprinkle the soup with mint and serve
