Carrot and Coriander soup

Yeild:

servings 

Ingredients:

2 tbsp,  Olive oil

1200 ml,  Vegetable stock

500 g,  Carrots, chopped

1  Onion, sliced

1  Large Bunch Coriander, finely chopped

Preparation:

  1. Sweat the onions in the olive for about 10 minutes until soft
  2. Add the carrots and cook for a further 5 minutes
  3. Add the stock, bring to the boil then simmer for 30 minutes
  4. Season the soup well with sea salt and black pepper
  5. Take the soup off the heat and add the coriander, stir through before serving
