Cauliflower Soup

Originaly Yeild:

4 servings




1  Garlic -1 clove crushed

0.25 tsp,  Ground nutmeg

0.25 tsp,  Freshly ground black pepper

1.50 tsp,  salt

1.40  1.4L pints/water

350 g,  Cauliflower -1 chopped

125 g,  Large sized carrot -1 diced

200 g,  Spring onions - 3 chopped

5 tbsp,  Chopped fresh parsley


  1. In a large sauce pan, melt butter.
  2. Saute garlic in butter for 30 seconds, and then stir in nutmeg, pepper and salt and saute 30 seconds more on a low flame.
  3. Now add the water/pint and add the cauliflower. Bring the ingredients to boil, reduce heat, cover and simmer 20 minutes until cauliflower is tender.
  4. In another small saucepan, cook carrot with water to cover till it turns tender. Drain and reserve.
  5. Process the cauliflower soup in a blender or food processor or with an immersion blender.
  6. Stir in reserved carrots, garnish with spring onion and parsley. Serve hot.
