Ingredients:

4  Carrots, thick sliced

4  Celary stalks, sliced

2  Onions, thick sliced

2  Leeks, chopped

1  Small chicken

4  Bay leafs

2000 ml,  Water

Preparation:

  1. In a large stock pot sweat the vegetables and bay leaves in a little olive oil for 5 minutes
  2. Place the chicken on top then cover with water
  3. Bring to the boil then simmer, covered for about 2 hours
  4. Take out the chicken, remove the meat from the carcass and shred into small pieces (let it cool a little first!) All the chicken back to the pan
  5. Season generously with salt and pepper
