Cream of broccoli soup

6 servings




2 tbsp,  butter

1  onion, chopped

1  celery, chopped

750 ml,  chicken stock

700 g,  broccoli florets

3 tbsp,  plain flour

500 ml,  milk

0.25 tsp,  salt and ground black pepper to taste


  1. Heat a medium sized pan and melt 2 tablespoons butter.
  2. Add onion and celery and sauté until it turns tender.
  3. Add broccoli and stock, cover and simmer for 10 minutes.
  4. With a hand blender, puree the soup and then return to heat.
  5. Meanwhile, in small saucepan, over medium-heat melt 3 tablespoons butter, stir in flour and add milk. Stir until thick and bubbly, and add to soup.
  6. Sprinkle salt and pepper and serve hot.
