Fennel Soup

Yeild:

servings 

Ingredients:

50 g,  Butter

5  Fennel bulbs - 5 trimmed and quartered

900 ml,  Vegetable stock

2 tbsp,  Salt and pepper to taste

Preparation:

  1. In a large frying pan, melt the butter over medium heat.
  2. Add the quartered fennel bulbs; cook and stir until it turns golden brown, about 10 minutes.
  3. Pour in the stock, and simmer until fennel is tender, about 15 more minutes.
  4. Ladle into soup bowls, and season with salt and pepper. Serve hot.
