Irish Potato Soup

4 servings




113 g,  Unsalted butter

100 g,  Thin sliced onion

1 lb,  Thin sliced leeks

500 g,  Potatoes scrubbed and thin sliced

2 servings,  Chopped kale, parsley, spinach, or turnip greens--or a combination

6 servings,  Vegetable broth

2 tbsp,  Salt and freshly-ground black pepper

2 servings,  Optional toppings: Chopped fresh chives or scallions

2 servings,  Optional toppings:Shredded sharp Irish cheddar cheese


  1. Heat a heavy-bottomed soup pan over low heat. Melt the butter, add onion and leeks and sauté it. Cover the pot and cook them on a low flame for 20 minutes.
  2. Now add potato, stir it and cook for 15 minutes. Add broth and stir it.
  3. Add salt and pepper to taste and boil the whole mixture on medium flame.
  4. Slowly reduce the heat to simmer and leave the soup to cook for 20 minutes till the potato is just tender.
  5. Now add greens and continue cooking for 10 minutes to allow the flavour to mix with the soup.
  6. Process soup in batches in a blender or food processor, or with a hand-held immersion blender. Return to soup pot and reheat.
  7. Garnish with one or more of the toppings mentioned above and serve hot.
