Potato Soup with Leeks

Yeild:

servings 

Ingredients:

50 g,  Butter

25 g,  garlic, chopped

50 g,  Onion, chopped

30 g,  large leeks, chopped

250 g,  potatoes, peeled and diced

900 ml,  vegetable stock

25 g,  handful chopped fresh parsley

1  gari

50 g,  Corn flour

0.50 tsp,  Salt and black pepper powder

Preparation:

  1. On a medium heat melt the butter in a large saucepan, do not overheat the butter.
  2. Sauté garlic and onions for a few minutes stirring frequently.
  3. Add remaining ingredients step by step and bring the whole content to the boil. Cook on a low flame for 30 minutes.
  4. Remove the bouquet gari from the mixture and purée the soup with a hand blender. Add corn flour to thicken the soup if it is too thin.
  5. Sprinkle salt and pepper over the soup and serve with buttered bread.
