Roast Parsnip Soup

Cover Recipe: "A delicous winter soup, I usually serve this at Christmas time but its equally good all year round!."

Parsnips

Onion, chopped

Vegetable stock

Natural yoghurt

Nutmeg, pinch
Preparation:

Peel the parsnips and cut into chunks, roast them in the oven with seasoning and olive oil for about 20 minutes until golden. Turn them half way through.

Peel the potato and cut into chunks. Fry the parsnips, potato and onion in a large pan for about 10 minutes.

Add the stock and simmer for 40 minutes. Puree the mixture in a blender until smooth and return to the pan.

Add the remaining ingredients and check the seasoning
