Roasted onion soup

Ingredients:

1000 g,  onion, thinly sliced

2 tbsp,  olive oil

1 tbsp,  sugar

1 tbsp,  chopped fresh thyme

125 ml,  dry white wine

1300 ml,  vegetable stock

4  thick slices French bread

50 g,  Gruyère cheese, grated

0.25 tsp,  salt and black pepper to taste

Preparation:

  1. In a large pan, heat olive oil. Add onions, oil, sugar and seasoning and sauté for 5 – 10 minutes.
  2. Add thyme and roast it for another 10 minutes until the onions turn brown and tender.
  3. Bring the mixture to boil over high heat and add the wine and stir for 2 minutes with a wooden spoon, scraping the onions and browned bits from the bottom of the pan, until the wine is syrupy.
  4. Stir in the vegetable stock, bring to the boil, then reduce the heat and simmer for 15 minutes until the flavours are blended.
  5. Meanwhile in toast the French bread for 2 minutes on each side.
  6. Ladle the soup into four heatproof bowls. Float a bread slice in each bowl and sprinkle with cheese.
  7. Place the bowls in the grill pan or a shallow baking tin and grill on a low shelf in the oven for 2 minutes or until the cheese is melted and bubbling. Serve immediately to get rich taste.
