Ingredients:

2 medium,  chopped mango

1 tin,  blueberries

0.25 tin,  fresh orange juice

0.50 medium,  chopped pineapple

2 medium,  lemon, peeled

2 medium,  lime, peeled

2 medium,  orange, peeled

2 tbsp,  fresh lemon juice

2 tbsp,  fresh lime juice

2 tin,  chopped strawberries

1 tsp,  Mint sprigs, for garnish

1 tbsp,  sugar

Preparation:

  1. Put the ginger in a pot and sauté over medium-high heat for about 2 minutes. Oil is not necessary.
  2. Add two-thirds of the strawberries, half of the pineapple, half of the chopped mango and the lemon, lime and orange peels; and then cook for 2 more minutes.
  3. Add water, sugar and fruit juices and then boil the mixture for 5 minutes while occasionally stirring the mixture. After that, remove from heat and allow to cool.
  4. Transfer in batches to a blender or food processor.
  5. Puree and strain into a large bowl.
  6. Add the remaining strawberries, pineapple, chopped mango and blueberries; and stir to obtain a uniform mixture.
  7. Cover and refrigerate until well chilled.
