Double-Stuffed Barbecue Potatoes

8 servings




9 medium,  baking potatoes

8 oz,  softened cream cheese

0.50 tin,  mayonnaise

1 tbsp,  white wine vinegar

1 tsp,  pepper

2 tsp,  lemon juice

0.75 tsp,  salt

3 tin,  chopped barbecued pork,

4 oz,  shredded Cheddar cheese

0.25 tin,  chopped fresh chives


  1. First, wrap the potatoes with an aluminum foil and then bake them at a temperature of 425° for 45 minutes.
  2. Make on each of the baked potato. Then scoop out pulp into a large bowl, leaving 8 shells intact; set aside about 2 cups of pulp for another use
  3. Mash together remaining potato pulp, cream cheese, and next 5 ingredients; stir in pork. Spoon mixture evenly into shells; top evenly with Cheddar cheese and chives. Place on a lightly greased baking sheet.
  4. Finally,bake the potatoes at a temperature of 375° for another 20 minutes.
