Egg Noodle

6 servings




6 oz,  egg noodles

1 tbsp,  butter

11 oz,  diced reduced-sodium smoked ham

1 tin,  chopped onion

0.50 tin,  carrot

0.50 tin,  chopped celery

0.50 tin,  chopped red bell pepper

1 tsp,  dried oregano

0.50 tin,  dried thyme

3 medium,  garlic cloves, minced

4 tin,  sliced collard greens, stems removed

2 tbsp,  cider vinegar

3 tin,  chicken broth

0.25 tsp,  freshly ground black pepper


  1. Cook the noodles and drain off any excess water.
  2. Melt the butter in a different pot, then add the smoked hams and then cook for 8 minutes while stirring occasionally.
  3. Add chopped onion and next 6 ingredients (through garlic); cook 5 minutes or until vegetables are just tender, stirring frequently. Add collard greens; cook 1 minute, stirring constantly. Stir in vinegar; cook 1 minute. Stir in chicken broth; bring to a boil.
  4. Cover, reduce heat, and simmer 12 minutes. Stir in the egg noodles and black pepper, and cook 1 minute or until thoroughly heated.
