Green Beans and Potatoes in Tomato Sauce

Ingredients:

1.50 tbsp,  olive oil

1 medium,  garlic clove, minced

1.50 tin,  diced red potato

0.50 tin,  chopped celery

0.50 tsp,  salt

570 g,  green beans, trimmed

0.30 tin,  chopped fresh cilantro

350 g,  plum tomatoes, peeled and coarsely chopped

0.25 tsp,  freshly ground black pepper

0.25 tsp,  ground red pepper

Preparation:

  1. Heat olive oil in a large skillet over medium-high heat. Add garlic to pan; sauté 30 seconds, stirring constantly.
  2. Add potato, celery, salt, and beans; sauté 1 minute. Add 1/4 cup water; cover and cook 5 minutes or until beans are crisp-tender. Add cilantro and tomatoes.
  3. Cover, reduce heat, and cook 4 minutes or until tomatoes begin to soften, stirring occasionally. Stir in peppers.
